Gingered Chicken & Fruit Salad

Ingredients: 

Dressing

  • 1/2 tsp (2mL) grated lime peel
  • 2 Tbsp  (25mL) fresh lime juice
  • 2 Tbsp  (25mL) canola oil
  • 1 Tbsp  (15mL) water
  • 2 tsp     (10 mL) Ontario Honey
  • 1/2 tsp  (2mL) ground ginger

Salad

  • 6 cups (1.5 L) fresh baby spinach leaves
  • 2 cups (500mL) cubed cooked chicken breast
  • 1 ripe medium mango, seed removed, peeled and cubed
  • 1 cup  (250mL) red seedless grapes, halved
  • 2 medium green onions, sliced (2 T)
  • 2 Tbsp (25mL) coarsely chopped pecans, toasted
Directions: 

In container with tight-fitting lid, shake dressing ingredients until well mixed. Divide spinach leaves among 4 serving plates and top each with chicken, mango, grapes, onions and pecans. Drizzle with dressing.
