  • Gingered Chicken and Fruit Salad

    Ingredients

    Dressing:

    • 1/2 tsp grated lime peel
    • 2 T fresh lime juice
    • 2 T canola oil
    • 1 T water
    • 2 tsp Ontario Honey
    • 1/2 tsp ground ginger

    Salad

    • 6 cups fresh baby spinach leaves
    • 2 cups cubed cooked chicken breast
    • 1 ripe medium mango, seed removed, peeled and cubed
    • 1 cup red seedless grapes, halved
    • 2 medium green onions, sliced (2 T)
    • 2 T coarsely chopped pecans, toasted

    Directions

    1. In container with tight-fitting lid, shake dressing ingredients until well mixed.
    2. Divide spinach leaves among 4 serving plates and top each with chicken, mango, grapes, onions and pecans.
    3. Drizzle with dressing.

  • Honey Salad Dressing & Strawberry Salad

    Ingredients

    Dressing Ingrediants:

    1/2 cup Ontario Honey

    1/2 cup Oil

    1/2 cup White Vinegar

    1/4 cup Poppy or Sesame Seed (optional)

    1 tsp Paprika

    1 tsp Dried Minced Onion

    1 tsp Worchester Sauce

    1/2 tsp dry Mustard Powder

     Salad Ingrediants:

    Baby Spinach or Spring Mix Melange Greens

    1 cup (or more!) Strawberries Sliced (can substitute with Mandarin Orange segments)

    1//2 cup Sliced Almonds

    1 Purple Onion (optional)

    Directions

    Dressing:

    Mix all ingrediants together.  Stir well to be sure the honey is mixed thoroughly.  Shake well before using.  Keep unused portions in the refrigerator.

     Salad:

    Wash and cut the fresh strawberries and add them to the washed salad greens (either spinach or melange) along with almonds and sliced purple onion.  Top with the honey dressing.
